Chocolate Chip Cookie in a Mug

I’m on a kick apparently… The other night I tried this pinterest recipe for a single chocolate chip cookie. Of course I used carob chips instead of chocolate chips since I cannot eat chocolate…I know sad story. haha.

I do have to say that it was more like a cake and less like a cookie. I really love the crunch of a cookie, but also the softness. Do you know what I mean? But it may do that fix if you are craving a cookie and only want one. 🙂

Melt one tablespoon of butter in a microwave safe mug. Add one tablespoon of white sugar, one tablespoon of brown sugar, a few drops of vanilla and a pinch of kosher salt.

Stir those together, I found a fork to be easy to use. Then add one egg yolk. Stir again. You will have a soupy mixture .Measure a scant {slightly less than full} 1/4 cup of all-purpose flour, stir to combine. Now your mixture should start to look like cookie dough.

Add two tablespoons of semi-sweet chocolate chips (or carob chips). Also known as, 1/8 of a cup.

Give a final stir, and pop your mug in the microwave for 40-60 seconds depending on your microwave. Start checking for doneness at the 40 second mark. You’ll know it’s ready when it looks like a cookie!

Maybe instead of using a mug and the microwave use a small glass container and stick it in the toaster oven at 350 for a few minutes…it might get crunchy then…I’ll have to try it sometime and let you know.
