Homemade Oatmeal Cream Pies

Last night I baked these:

They aren’t completely like the Little Debbie’s Oatmeal Cream Pies, but they are VERY tasty. I think the recipe could be changed to be more of a oatmeal whoppie pie to get the same texture as the Little Debbie’s. Either way here is the recipe!

Oatmeal Cream Pies (makes 3 dozen cookies or 18 cream pies)

1 1/4 cup butter (softened)
1 cup brown sugar packed
1/2 cup sugar
1 1/2 cup flour
3 cups oats
1 egg
2 tsp vanilla
1 tsp soda
1/2 tsp salt
1/4 tsp cinnamon

Cream Filling
1/2 cup softened butter
1 tsp vanilla
2 cups powdered sugar
1-2 tbps whipping cream ( I used half and half)

Preheat oven to 375. In a large bowl beat butter and sugar until creamy. Add egg and vanilla and mix well. In a separate medium bowl mix flour, soda, salt, and cinnamon. Add oats and mix well. Add dry mixture to butter mixture. Blend until well mixed. Drop by rounded tablespoons 2″ apart on baking sheets. ( I used a pampered chief 2 tbps scope and squished them down to be a little flat instead of rounded.)

Bake at 375F for 9-10 minutes or until golden brown.

Meanwhile mix the cream filling. Combine all filling ingredients (butter, vanilla, powdered sugar, whipping cream) in a medium bowl. Beat on low until mixed well. Then beat on high until light and fluffy.

Leave on cookie sheet for 2 minutes. Cool on a wire rack.

Cool cookies completely. (Make sure cookies are completely cool otherwise filling will melt. I even threw them in the fridge for a bit). Spread about 1 tbsp of cream filing in between two cookies.
