I really struggle to eat salads without fat. Being on the Medical Medium protocols I’ve tried to stay as low fat as possible which means no more oil/vinegar based dressings. So when I realized I could transform an old recipe I created a while ago of this same potato melody into a salad I was SO excited to have a HUGE bowl of salad and ENJOY it completely FAT FREE!! WHOO!! Bonus that its super color and fun looking to eat. I hope you enjoy this yummy easy to make salad that can also be prepped for bulk lunches if you’re on the go! Enjoy friends!
Rainbow Lemon Basil Potato Melody Salad Recipe
Makes: 3-4 servings
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients

5 small melody multi-colored potatoes (purple, red, golden) chopped into bit sized pieces

3 rainbows carrots (purple, white, orange) pealed and chopped into bit size pieces

2tsp basil
-
1tsp oregano
-
1/2tsp thyme
-
1/2tsp salt
-
1/4tsp rosemary
-
1 clove garlic crushed
-
Zest of one full lemon
-
1/2 juice of a lemon
-
2-4cups of spinach or salad of choice
Instructions

In a large pot with a steaming basket add 1 cup of water bring to a boil.

Add chopped potatoes, carrots, spices and garlic.

Steam for about 15-20 minutes until carrots are tender.

Remove carefully from pot add lemon zest and stir.

Place steamed veggies over salad.

Pour lemon juice over the top as dressing, add more or less as desired. Enjoy!
Notes

This recipe is great to double and eat throughout the week as a meal prep meal. Store potatoes separate from salad. Reheat in toaster oven at 350 for 10 minutes place on top of salad and juice desired amount of lemon on top! Enjoy!
