S’mores Chocolate Cookies {Recipe}

I have NEVER been good at making food look yummy even if it actually takes delicious. I also haven’t been good at photographing food. So I’ve started to try to actually practice taking photos of food and thankfully I found this S’mores chocolate cookie recipe from Sally’s Baking Addiction that resulted in some pretty cookies!

I changed up the recipe a little since I didn’t have mini marshmallows so here is what I did!

Ingredients:

  • 1 cup all-purpose flour
  • 2/3 cup  unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/2 cup  unsalted butter, softened
  • 1/2 cup  granulated sugar
  • 1/2 cup  packed brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 Tablespoons  milk
  • Handful of marshmallows cut in fourths (its ok if they are stale!)
  • 4 full-sheet graham crackers, crushed into fine crumbs

Directions:

Mix the flour, cocoa powder, baking soda, and salt in a medium bowl. Set aside.

Mix the butter, granulated sugar and brown sugar together in a large bowl. (You can use a hand held mixer if you want but I just used a regular spoon) Beat in the egg and vanilla.

Gradually add the dry ingredients into the wet ingredients until well combined. Add the milk. The dough will be heavy and sticky. Cover and chill in refrigerator for at least 2 hours or in freezer for 30-45 minutes.

Take the dough out from chilling and allow to  soften a little at room temperature for 10 minutes. Preheat the oven to 350F degrees. Line a large baking sheet with parchment paper or a silicone baking mat. (FYI if you don’t own a silicone baking mat and bake at least once a week go get a few, it’ll be the best $20 you ever spent!!)

Put graham cracker crumbs into a small bowl. Take spoon full of chilled dough and roll into a ball with your hands. Roll each cookie dough ball into the graham crumbs. Repeat with the rest of the dough. Bake for 10 minutes.

Remove promptly from the oven. Press your cut up marshmallow on top of each cookie. Return to the oven for another 1-2 minutes until marshmallow has a golden touch to it. Remove from the oven. Cookies will look under done and very soft but let them cool on the cookie sheet for at least 5 minutes before transferring to a wire rack to cool all the way.
