Who doesn’t love ice cream? I know I would always say yes to an ice cream store visit.

But going down this path to healing from chronic illnesses through diet, dairy is out as well as refined sugar…and to top it all of my body doesn’t tolerate coconut well. So I thought all hope was lost for ice cream to be back in my life.

Then I started the medical medium protocol and bananas were introduced heavily into my diet as well as bananas ice cream, and to say my life has been changed is an understatement haha.

So if you love bananas, are on a similar healing journey, or just want some quick ice cream without the dairy, coconut, or refined sugar enjoy this fun recipe!

Banana Ice Cream Recipe

Ingredients

  • 3 bananas
  • 3 tbps Tahini
  • 2 tbps raw honey

Instructions

  1. Chop bananas and freeze in an air tight container for 3-4 hours. I prefer to use glass containers.
  2. Alternatively freeze 3 brown almost black bananas. Defrost on counter for 1-2 hours until skin is soft. Using a sharp knife and cutting board slice long ways down the banana and open up the insides dumping them into a food processor, discarding skin.
  3. Place bananas in a food processor. Let them get slightly soft for 20 minutes or continue if not completely hard as a rock frozen.
  4. Add tahini and honey. Process in food processor until creamy ice cream is made. It can take a few minutes of processing to get the bananas to process completely. Stop a few times in between to scrape the sides down. If bananas are not processing, let them warm up slightly or add a 1tbps of water.
  5. Serve immediately or place back in freezer to save for later! Thaw before serving again. Enjoy friends!

*Notes & Variations:

  • Feel free to substitute tahini for any nut butter of your choice!
  • You could also add in other fruit! If choosing frozen fruit make sure to thaw it for 30-60 minutes before processing it with the banana. We love adding strawberries to our banana ice cream!
  • If you’re on the whole 30 diet, feel free to skip the honey!

Enjoy friends! If you make this I’d love to hear from you! Shoot me an email or tag me on Instagram @celebrateagain or use my hashtag #cabakes
